I’m pretty sure I’ve mentioned before that my family (especially my son and I) eat a LOT of dips. We frequently will have some variety of dip for lunch with chips and veggies or fruit. I always just pull something together and have a pretty good system for always making something pretty good. Recently we had dip again, of course, and my son says “How about something with pineapple?” I said, “Well, Pineapple needs bacon!” And the following dip was the result. It is SO good. It tastes great with tortilla chips but just as good with something like apple slices or celery sticks.
Pineapple and Bacon Dip
A simple dip that tastes as good with chips as it does with apple slices or celery.
Makes about 5 cups of dip.
- 1 can crushed pineapple For a thicker dip drain some of the liquid.
- 5 strips bacon cooked and crumbled
- 2 stalks celery
- 1 block cream cheese standard 8 oz block
- 4-5 Green Onions chop or break of root end and any dried or shriveled tips
Put celery in food processor and pulse a few times to chop it up into smaller pieces
Break onions into smaller (a few inches is fine) pieces and add to food processor. Also, add cream cheese and pineapple Pulse to combine thoroughly.
Add bacon to the dip. You can put it into the food processor and pulse to combine and chop up a bit more, OR move the dip to a different dish and just fold in the bacon to combine.
If you're just making a snack feel free to dive right in. If it is for a party or event garnish with some extra bacon crumbles and/or snips of green onions.
