Banana Breakfast Cheesecakes- Easy, Quick, Gluten Free and No Sugar!
I’m trying to get better about eating breakfast and decided to best place to start is by pre-making some things that are easy to grab. I mentioned in my Weekly Workbasket recently that I wanted to work on some freezer meals. One recipe I found on Pinterest really peeked my interest. It has everything we love and is gluten free! Banana Breakfast Cheesecakes! I do LOVE a cheesecake.
They are SO Good! I admit they don’t look like much, but they taste amazing! They were also really easy to make. I followed the recipe that was posted over on Amy’s Healthy Baking.
I did make a few changes. The recipe only made 2, and that wasn’t going to work for me, so I made more crust and used 12 regular sized muffin cups. For the cheesecake filling I used 2 bananas, one 8 oz block of cream cheese, and then everything else as she listed it. (More or less, I didn’t really measure to be honest.) I managed to fill all 12 cups with topping. I did end up with more base then she did in her pictures, but I don’t mind. Honestly, I can picture making the base alone and snacking on it! Especially if you add some cinnamon!
I topped 6 of them with some homemade granola, and left six plain. They are delicious! I really hope they even make it to breakfast! These could easily be a snack, a party food (especially with mini muffin cups) or a dessert!
